Sprouted Lentil Patties

Did you know that lentils are one of the world’s oldest health foods? They have been around since 8,000 B.C. No wonder, they are amazing food, packed with minerals and vitamins like calcium, iron, potassium, and folate. Lentils are also packed with protein. In fact, they have the second-highest protein content of all beans and when combining them with a whole grain like brown rice, they have the same quality as meat protein.

Lentils are one of the easiest seeds to sprout and they are ready in just a few days. Sprouting lentils neutralizes phytic acid and hugely increases the bioavailability of the B vitamins and C vitamins in lentils. This means these nutrients are more easily digested by our gut and we can therefore absorb bigger quantities. You can make this recipe with sprouted lentils or regular dried lentils. If you use dried lentils, however, you will need to cook the lentils beforehand.

You can also adapt this recipe to be fully vegan by swapping the egg for a flax egg. For this, you just have to mix 1 Tbsp of ground flaxseed with 2 Tbsp of water. Let this sit for about 10 min until it reaches a gelatinous consistency.

 

Step 1 – Prepare and sauté the veggies

Chop the mushrooms, the onion the garlic, and the walnuts into small pieces. Add the onions, garlic, and mushrooms to a large pan and sauté for a few minutes in a pan with olive oil.⁠⁠

 

Step 2 – Mix the pattie dough

Mix the oats, walnuts, the lentils, the mushroom-onion mixture, the egg (or flax egg), and the spices together in a large bowl. Mix until everything is well combined and you have a smooth consistency.

 

Step 3 – Form and bake the patties

Form the patties with your hand, you decide how big or small you want to make them. Bake the patties in a skillet with sunflower oil or any frying oil of your choice. Make sure to fry them from both sides and when they are nice and brown on both sides, remove them from the skillet. 

 

Step 4 – Enjoy!

It is time to enjoy your sprouted lentil patties! I like to make some Tahini-Yoghurt Sauce to dip them in or just add them salads and bowls.
